In a saucepan, put 100g Sugar (½ cup)

Put on low heat

Caramelized the sugar until amber in color (you must stop mixing so that the sugar does not crystallize)

Add 5 Tbsp Water and mix lightly just so that the mixture is incorporated

Transfer the caramel to the baking dish

Add 6 egg whites to a very clean mixing bowl. Beat the egg whites with an electric mixer for about a minute on high speed until the egg whites are foamy

Continue mixing at high speed while slowly adding 60g Sugar (¼ cup)

The meringue should have a very firm consistency. Total whipping time on high speed will be approximately 5-7 minutes

Place the mold into the Bain Marie and bake the pudding in a bain marie (water bath) in a preheated oven at 175°C / 350°F for 35 minutes
