Add the egg yolk and vanilla and continue creaming until fluffy

Add Flour and mix at low speed just until fully incorporated. I mixed with my hand

Scoop the cookie dough into 1 tablespoon-sized portions and roll well to form smooth, uniform balls. Place on the prepared baking sheet, leaving 2 inches between each cookie for spreading room

Use your index finger or the end of a wooden spoon to make a small indentation in the centre of each ball
